Smoked what?!?

The other day I was sitting around thinking about food - yep I am just about all the time - and thought why not smoke veggies? So I decided to smoke butternut and acorn squash.  Fair warning - it takes forever!

So here's what I did. I cut up the squash into nice size chunks, put them into a bowl and mixed them with a little olive oil. Of course I sprinkled Steak Mojo all over them.

After making sure everything was nicely coated I made 2 layers of squash in the smoker. I also put in a whole garlic in a bit of tin foil with some olive oil and Porcini Truffle Tango.

I used pecan wood and a little apple juice in the water pan and smoked them at 220 degrees. After 3 hours they were still too hard so I put them in a roasting pan and put them in the oven at 375 degrees for about 20 minutes.

The flavor and aroma was delicious! I was concerned it would be too smokey but they weren't. I was so happy I tried it.

This dish is substantial enough for a main course for a vegetarian but they also make an awesome side dish.  I'm going to make these for Thanksgiving dinner but will do it the day before and just roast them the last 15 minutes before serving.
